Portuguese Cheese

The Portuguese are great cheese lovers, however, for a long time they only produced cheese for private use – especially sheep's and goat's milk – since Portugal has many mountains and cows are therefore quite rare.

In the last years, dairy production has been promoted in order to preserve regional products (see below), but also to increase factory production. Today, a high quality standard has been achieved.

The typical shape for cheeses are small, round, half-high loaves. Depending on the ripening stage, the cheeses are classified from "derrete" (melting) to hard.
